Cheesy Mac N Cheese

Mac N Cheese Recipe

Macaroni and cheese should be done right it’s amazing, but it can very much be a miss :(. We appreciate the cheese but we need some more flavour than that. It’s not lactose intolerant friendly, but if you’re gonna indulge let’s make it worth it. My recipes undefeated so far, so I dare you to try and let me know.



Total Time 40- 50mins

Cook time 30 minutes

Oven time 10-15 mins

Chill time 5 mins



Ingredients

  • Macaroni

  • Cheeses

  • -Cheddar Cheese

  • -Red Leicester Cheese

  • -Mozzarella Cheese

  • Whole milk

  • Plain flour

  • Butter

  • Garlic powder

  • Smoked paprika

  • Black pepper

  • Chicken seasoning/ vegetable seasoning.

  • Salt


Notes

  • Make sure you white sauce is thick before we add in cheese

  • Preheat your oven to 200°C before the Mac n cheese goes in

  • Use freshly grated cheese. It is better than pre shredded

Instructions

  • Boil your macaroni and get that out the way

  • Cook till al dente or your preferred softness. I seasoned mine with a pinch of chicken seasoning for extra flavour.

  • Start grating your cheeses. Freshly grated cheese has a better texture.

  • Strain the noodles and reserve a little little bit of the water for future use

  • In a pan on high heat, melt down some butter

  • Once that’s melted, add in half the amount of flour and reduce to medium to low heat and cook until it no longer raw for 2 minutes.

  • Add in whole milk, the amount is dependent on how much you want your cheese sauce  to yield

  • Use a whisk to combine this on medium to high heat until this thickens up

  • Season the sauce with garlic powder, smoked paprika, black pepper and chicken seasoning, all to taste

  • Your cheese sauce should take about 6 to 7 minutes to make

  • Folded in your grated cheese

  • Add in cooked macaroni

  • Stir until combined and adjust seasonings

  • If you are not using chicken seasoning, use salt and adjust

  • Transfer into an oven safe dish

  • Put into your preheated oven for about 10 to 15 minutes until the top has formed and a nice crust has developed

  • Remove when it’s ready

  • Let it rest for at least five minutes

  • Slice in and enjoy
