NANDOS AT MY HOME


I have a love for a full package of Nando’s, but it’s really the garlic bread and the wings that draws me in, Nando was actually the place that made me fall in love with lemon and herb and tangy sauces , so I treasure them. Let’s get right into it

Ingredients

  • PeriPeri sauce

  • 2 Chicken legs

  • 8 full chicken wings

  • Potatoes

  • Jasmine Rice

  • Corn on the cob

  • Panini bread


PeriPeri sauce

  • 1 Garlic bulb

  • 2 medium onions

  • 1/2 red bell pepper

  • 1 whole sweet pointy peppers

  • 3 jalapeños

  • Handful of parsley  or cilantro/Coriander

  • 1/3 cup red wine vinegar

  • 1/3 cup neutral oil

  • Optional 2tbs lemon juice

  • 1tbs garlic powder

  • Salt to taste


  • Chilli flakes

  • Chilli powder

  • Chicken stock


Garlic bread

  • Panini bread

  • Half bulb Garlic confit

  • 4 stems Chopped parsley

  • Salted butter



Grilled corn

  • Corn

  • Garlic butter

  • Old bay seasoning


Peri Peri Spicy rice

  • 4 tbs Neutral oil

  • 1 tsp Tomato paste

  • 1/4 cup peri peri marinade

  • 1tbs Chilli flakes

  • 1tsp Chicken seasoning

  • 2 cups jasmine rice (swap with Basmati, but not easy cook )

  • 1:1 water to rice ratio

  • Salt to taste


Cajun Fries

  • 3 British potatoes

  • Ice cubes

  • Water

  • Neutral oil

  • 4 tbs Cajun seasoning

  • 2 tbs Garlic powder

  • 1 tbs sugar

  • 1 tbs dried parsley


Peri Peri Chicken

  • 5 tbs Peri Peri marinade

  • 2 tbs chicken seasoning

  • (Dry herbs and seasonings mix; paprika, onion powder, rosemary, garlic powder, parsley, celery )

  • Peri peri marinade + chicken drippings + chilli powder + chilli flakes + salt to taste

  • Grill


Notes

  • The order in which I filmed this video video is the best way to do this for time effectiveness, start with your Peri Peri sauce, soak fries, and an ice bath, get your chicken going in the oven and move onto the other condiments and sides

  • Where baking and grilling the chicken so in the oven cook the chicken until it’s almost done and finish on the grill for food safety reasons and to keep it moist. The char marks are the most important bit

  • Always adapt to your preference and times of salt oil

  • Cook the fries towards the end lest they get limp and soggy

  • Get your grill/ open flame going once the chicken is in the oven to ensure it’s ready to go ( no wasted time )



Instructions

Peri Peri Marinade

  • Into a lined air fryer tray/oven, add in the ingredients listed above with some oil for about 15 minutes (do not add the fresh herbs)

  • into a blender, combine all of that with the oil, red wine, vinegar, garlic powder, fresh herbs, lemon juice, and blitz.

  • Adjust to taste with salt, and there is your Peri Peri marinade


Peri Peri Chicken

  • Add 5 tbs Peri Peri marinade, 2 tbs chicken seasoning, (Dry herbs and seasonings mix; paprika, onion powder, rosemary, garlic powder, parsley, celery )

  • Add the chicken legs and wings or whatever cut of chicken you choose to use

  • Place into a lined oven tray

  • Pop the chicken Into a preheated 200°C oven for about 30 mins ( just until nearly done )

  • Extract the chicken drippings and add into the next step

  • Peri peri marinade + chicken drippings + chilli powder + chilli flakes + salt to taste

  • Grill

  • Lightly spray your tray/Rack/ surface with oil

  • Place your chicken pieces over the grill for about 5-10 mins basting with our peri peri sauce

  • Once the chicken is cooked through (165F +) and charred , remove it is ready to serve

  • Properly extinguish your flame on the grill


Cajun Fries

  • Peel and clean, three British potatoes

  • Sliced them into your preferred chunk sizes

  • Add ice cubes and cold water into a bowl and leave the potatoes to sit for at least one hour

  • Drain from the water

  • Drizzle with some oil and into your air fryer on 180°C for about 30 to 35 minutes. Checking  and turning every 10 minutes.

  • Repeat this, until Golden Brown crispy and cooked through

  • For your dry Cajun seasoning, add Cajun seasoning, garlic powder and sugar and parsley ( the measurements are at the ingredients at the top)

  • Toss to combine, and it is ready


Peri Peri/Spicy Rice

  • In a pot on high heat  add 4 tbs Neutral oil,1 tsp Tomato paste, 1/4 cup peri peri marinade,1tsp Chicken seasoning.

  • Fry this down for a minute or and then add 2 cups jasmine rice (swap with Basmati, but not easy cook )

  • Add 1tbs Chilli flakes

  • A 1:1 water to rice ratio

  • Add Salt to taste

  • Once this bubbles lower the heat to medium low and allow to steam for 10-15 mins till fork fluffy and tender.


Grilled corn

  • Corn

  • Garlic butter

  • Old bay seasoning

  • Soak skewers/toothpicks in water and insert to the end of the corn to prevent burning.

  • brush with the mixture and grilled to your desired charr-ness

  • 10-15 mins will do


Garlic Bread

  • Slice Panini bread into halves,

  • Roast Half a bulb of Garlic for 20-30 mins in air fryer of oven

  • Chop up 4 stems Chopped parsley add to the garlic confit and Salted butter

  • Spread unto bread

  • Roast for about 8-12 mins in the oven till crispy and perfect
