One pot Chicken & Rice

One pot chicken and rice is loved by many because it is packed with flavour and it is a stressfree cooking dish. It resembles the taste of fried rice, but much more fuller. This particular recipe is savoury and sweet.(oyster sauce ). I guarantee you will love it and it will become your go to when you want rice and chicken.
Ingredients
Tumeric
Onion powder
Garlic powder
Chilli Powder
Fried Parsley.
oyster sauce.
Olive oil.
Salt to taste
Chili powder
Complete seasoning( you can substitute this for any stock cube of choice )

Instructions
The way this is gonna go is to season your chicken, sear your chicken remove it, create your chicken broth and cook your rice and chicken together.
Generously season your chicken with 2 tablespoons of each of the dry ingredients listed above and oil.
Set that aside to marinate for an hour or more
Heat your pot up on a very high setting with cooking oil of choice
Drop drumsticks in one at a time, insuring not too overcrowd the oil. Overcrowding will lead the chicken to steaming which we’re not looking for today
Do not throw away the rest of the marinade. It will be used later on.
After searching/charring the chicken on both sides for about 4 minutes each, remove and set aside
Deglaze the pot with water
Add 2 cups of water to your marinade, mix together and boil in pot to thicken ( concentrate) for about five minutes
Add in cleaned rice ( jasmine rice is my favourite )
Add water and bring that to a boil, still on high heat
Adjust salt to taste and add more stock seasoning if needed
Add back in chicken and turn the heat down to a medium high and let that rice steam undisturbed for 15 minutes
Check on the rice after 15 minutes and start the bottom to the top of the top to the bottom
Leave the theme for another 10 minutes
After 10 minutes, stir the rice again, do you continuously until the chicken and rice is fully cooked through
Plate your rice and garnish with some fresh parsley
Notes
You want to sear your chicken on high heat to get a beautiful colour and also to shorten the cooking process by starting to cook the chicken
Make sure the chicken is cooked through before you serve the rice which means longer cook time for the rise to steam and higher heat medium-high
